Island Yams

- 1 pound canned yams -- drained shopping list
- 1/2 medium banana -- thickly sliced shopping list
- 1/4 cup orange juice shopping list
- 1/2 teaspoon salt shopping list
- 1/8 teaspoon pepper shopping list
- 2 tablespoons pecans -- coarsely chopped shopping list
- 2 tablespoons toasted flake coconut shopping list
How to make it
- Preheat oven to 350F. In a buttered 1-qt casserole, arrange yams and banana. Pour juice over all. Sprinkle with salt, pepper. Top with pecans and coconut. Bake, covered, 30 minutes.
