Spicy Island Hot Sauce

- 1 ripe papaya, peeled, seeded & coarsely chopped shopping list
- 1 med yellow onion, coarsely chopped shopping list
- 2 med cloves garlic, minced shopping list
- 4 habanero peppers, stemmed & seeded shopping list
- 1in piece fresh ginger, peeled & coarsely chopped shopping list
- 1/3 cup dark rum shopping list
- 1/3 cup fresh lime juice shopping list
- 1 tsp salt shopping list
- 2 1/2 tsp honey shopping list
- 1/8 tsp cardamom shopping list
- 1/8 tsp anise shopping list
- 1/8 tsp cloves shopping list
- 1/8 tsp turmeric shopping list
- pinch of nutmeg shopping list
- pinch of cinnamon shopping list
- freshly ground black pepper to taste shopping list
How to make it
- Combine all ingredients in blender and puree just until smooth (do not overblend and aerate). Pour into saucepan & bring to boil, then simmer gently, uncovered for about 10 min. Remove from heat & allow to cool before bottling. Refrigerate, Sauce will keep approx. 6 weeks. Makes 2 cups.
