Blueberry Oatmeal Muffins

- 3/4 cup brown sugar shopping list
- 3/4 cup french-vanilla yogurt shopping list
- 1/2 cup mashed banana shopping list
- 1/4 cup oil shopping list
- 1 egg shopping list
- 3/4 cup quick-cooking rolled oats shopping list
- 1 cup unbleached flour shopping list
- 3/4 cup whole wheat flour shopping list
- 2 tsp baking powder shopping list
- 2 tsp cinnamon shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp salt shopping list
- 3/4 cup blueberries shopping list
How to make it
- In bowl, whisk together sugar, yogurt, banana, oil and egg; stir in rolled oats. Let stand for 10 minutes. In large bowl, whisk together unbleached and whole wheat flours, baking powder, cinnamon, baking soda and salt. Pour yogurt mixture over top; sprinkle with blueberries and stir just until dry ingredients are moistened. Spoon into paper-lined muffin or directly into muffin tin cups. Bake in center of 375 degrees F oven until tops are firm to the touch, 20 to 25 minutes. Remove from pan and let cool on rack.

Wow, really nice presentation, I can't imagine that little muffin is so nutritious - I don't really go for 'health' food and such *sigh* I just love my favourites too much I guess. However this looks tempting enough for me to stick my toe into the wa...more
