Blueberry Oatmeal Muffins

    Made a batch of
    Blueberry Oatmeal Muffins/saved
    last week and quite enjoyed them. I was a little worried about the French Vanilla yogurt (not a big fan of vanilla yogurt) but it was fine (although now I have a lot more of the container to use up). The banana addition was nice and made the muffin nice and moist. I actually didn't have any whole wheat flour on hand so just used 1 3/4 cup of the unbleached. The flavour is good and I'll make these again. They freeze well.

    What a nice coincidence, I acquired two large tubs of vanilla yogurt and don't know what to do with it other than eating straight or smoothies that I'm not into. Thanks Janet for bringing this to my attention. I know I can sub yogurt for sour cream but think the vanilla flavor could only be subbed in sweet or desert type recipes.

    You can hang the yogurt in a tea towel over a bowl in the fridge for 24 hours to let the whey drain out and have some yogurt cheese (labneh). It will taste like cream cheese with a vanilla flavoring. Then use the whey for drinking or in your cereal instead of milk or use it as the liquid for baked goods.
