Ingredients
  • 3 cups fresh mushrooms, sliced
  • 1 cup chopped onion
  • 3 tablespoons butter
  • 1/2 teaspoon salt
  • 1/3 teaspoon pepper
  • 1 cup white cooking wine
  • 1 1/2 cups heavy cream*
  • 1 teaspoon chopped bay leaf
  • 1 teaspoon celery seed
  • 1 teaspoon dried thyme
  • 6 ounces fettuccine, cooked
  • * As I am lactose-intolerant, I use Rice milk or Soy milk, adding several tablespoons of lactose-free creamer (unflavored) until I get the right consistency required.

Directions
  1. Sauté the mushrooms and onions in the butter until tender.
  2. Add the salt, pepper, and wine; simmer over low heat until the mixture is reduced by half, about 5 minutes.
  3. Stir in the cream, bay leaf, celery seed, and thyme.
  4. Bring to a low boil.
  5. Pour over pasta.
  6. Decorate the top of each dish with fresh sliced mushrooms.
