Janets Chicken  Dumplings Recipe
My chicken & Dumplings taste like it's been cooking all day - but takes less than an hour. It's easy to just add as much chicken you need to increase the servings. It's also pretty inexpensive to make!

Ingredients
  • 2 tsp butter or EVOO
  • 1 onion; coarsley chopped (optional)
  • 5 stalks celery chopped (optional)
  • 5 carrots chopped (optional)
  • 1 cup peas (optional)
  • 1-2 lbs chicken; cubed
  • 6 cups chicken stock
  • 1 can cream of chicken
  • pepper to taste
  • 1 tsp dried parsley or a couple sprigs fresh
  • 1 tsp paprika
  • 2 bay leaves
  • 1 cup Bisquick mix
  • 1/3 cup milk

Directions
  1. Heat a stock pot to medium-high
  2. add butter and veggies of your choice (except peas) & saute 2-3 min.
  3. add chicken and some pepper and paprika, toss for a min or two
  4. pour in chicken stock and cream of chicken, stir well
  5. add parsley, bay leaves, and a bit more pepper
  6. bring to a boil (takes about 15 min), meanwhile mix Bisquick mix & milk
  7. add peas (optional)
  8. drop small round balls of dough into pot, reduce heat to med-low
  9. cook uncovered 10 min, stir gently
  10. cook covered for 10 more min
  11. top with a bit of fresh parsley & serve!

Aw man! this reminds me of this german dish my grandmother used to make. Only difference was it was some sort of beef gravy with cream and chicken... i gotta check this out!


This was fantastic. I am a very beginner cook and this was my first time even cooking chicken this way and it came out wonderfully. :)
