This dish combines leftover Protein Rice, Veggie Cheat (leftover) Peas, Carrots, Onions & Tuna. It isn't "Pretty" but good luck trying to only have one helping.

Ingredients
  • These are approximate:
  • 1 1/2 Cups Protein Rice (3/4 Cup Rice & 1/4 Cup Soy Beans) Leftovers
  • 1 Cup Grated Carrot (Raw I used a Huge carrot that could have eaten New York)
  • 1 Medium Onion (Diced)
  • 3 Large Cloves Garlic (Large Dice)
  • 1/2 Cup Sweet Wine (I used leftover Rose)
  • 2 Heels Bread (Toasted & Processed for Breadcrumbs)
  • 1 or 2 Cans Tuna (Water Packed Save enough liquid to fill 1/3 of the Soup Can)
  • 1 Can Cream of Mushroom Soup
  • 1 Tablespoon Basil
  • 1/2 Tablespoon Tarragon
  • Olive Oil

Directions
  1. Preheat Oven to 350
  2. In a fairly large, heat resistant bowl, dump in the leftover Protein Rice, Leftover Veggie Cheat Peas & the huge raw Carrot (I diced or grated mine in the food processor).
  3. I then sauted the Onion until sweet in a frying pan. (About 2-3 Mins.)
  4. Added in the Basil & Tarragon & stirred.
  5. Poured in the Sweet Wine & added the Garlic.
  6. Cooked in frying pan until all the liquid is absorbed by the Onions & Garlic (About 3-4 mins.)
  7. Toasted Bread until brown & left out until just before I put it in food processor to "Crumb" it.
  8. Mixed the sweetened Onions & Garlic & the Tuna into the other ingredients in bowl.
  9. Dumped the can of Soup onto the ingredients in the bowl plus 1/3 Soup Can of Tuna Water & stirred.
  10. Made Bread Crumbs for the top.
  11. I also added a tad of Extra sharp Cheese, covered & put in oven.

This looks spectacularly good... I believe I could eat the whole lot, including carrot-zilla... Just the thing for a cold nearly-November night. Take care in those snowdrifts.
