Farmhouse Pork And Apple Pie

- 1 pound sliced bacon, cut into 2-inch pieces( or less fat and sodium use turkey bacon) shopping list
- 3 medium onions, chopped shopping list
- 3 pounds boneless pork, cubed shopping list
- ¾ cup all-purpose flour shopping list
- canola oil, optional shopping list
- 3 medium tart apples, peeled and chopped shopping list
- 1 tsp. rubbed sage shopping list
- ½ tsp. ground nutmeg shopping list
- 1 tsp. salt shopping list
- ¼ tsp. pepper shopping list
- 1 cup apple cider shopping list
- ½ cup water shopping list
- 4 medium potatoes, peeled and cubed shopping list
- ½ cup milk shopping list
- 5 Tbs. butter, divided ( or reduced-fat margarine ) shopping list
- Additional salt and pepper shopping list
- Snipped fresh parsley, optional shopping list
How to make it
- Cook bacon in an ovenproof 12-inch skilled until crisp. Remove bacon with a slotted spoon to paper towels to drain. In drippings, saute onions until tender; remove with a slotted spoon and set aside. Dust pork lightly with flour. Brown a third at a time in drippings, adding oil if needed. Remove from heat and drain. To pork, add bacon, onions, apples, sage, nutmeg, salt and pepper. Stir in cider and water. Cover and bake at 325 for 2 hours until pork is tender. In a sauce-pan, cook potatoes in boiling water until tender. Drain and mash with milk and 3 tablespoons butter. Add salt and pepper to taste. Remove skillet from oven and spread potatoes over pork mixture. Melt remaining butter; brush over potatoes. Broil 6-inches from the heat for 5 minutes or until topping is browned. Sprinkle with parsley if desired.
