Potato Waffle Latkes Recipe

This is a different take on potato pancakes (made with a wafflemaker). The syrup is great on French Toast, pancakes or waffles, as well. Adapted from: Judy Zeidler, Author, The Gourmet Jewish Cookbook (William Morrow and Co., Inc., 1988).

  • For the grape wine syrup:
  • 1 1/2 cups Concord grape wine or grape juice
  • 1/2 cup sugar
  • 1 Tbs. grated orange zest
  • *********
  • For the latkes:
  • 3 large russet potatoes, about 2 1/2 lb. total, peeled and diced
  • salt, to taste
  • 1/4 cup low-fat milk
  • 1 Tbs. unsalted butter, melted
  • Freshly ground pepper, to taste
  • Vegetable oil for cooking

Directions
  1. Syrup: In a saucepan, bring wine and sugar to a boil, stirring until the sugar dissolves. Add orange zest, reduce heat to low and simmer until the syrup is reduced by half, 10-15 minutes.
  2. Latkes: Boil potatoes until tender when pierced, about 15 minutes. Drain well. Push potatoes through a ricer or fine-mesh sieve. Transfer 3 cups of the potatoes to a bowl.
  3. In a small saucepan, warm the milk and butter until butter melts. Stir in 1 tsp. salt and season with pepper. Add milk mixture to potatoes and stir to mix well. Cool to room temperature.
  4. Divide potato mixture into eight equal portions and shape each into a ball.
  5. Line a baking sheet with aluminum foil. Preheat a waffle maker. Brush grids with oil. Place a potato ball in the center of the waffle maker and close the lid, pressing gently. Cook, without lifting the lid, until the waffle begins to steam and is golden brown and crisp, 4-5 minutes. Carefully lift a corner of the waffle to loosen and transfer to baking sheet. Repeat to cook the remaining waffles.
  6. Preheat oven to 400F. Transfer baking sheet to the oven and bake until the waffles are crisp, 3-5 minutes. Makes 8 waffles.

This is killer, got to get me a new waffle iron as the one I have my ex bought and it has heart shapes.
I guess it would make for good Date night latkes.

Another idea for a party appetizer is to make little potato pancake waffle sandwiches. Spread with cream cheese, top with smoked salmon; then top with another potato waffle latke.

Saw this as I was logging out this afternoon. Problems with my WiFi. Had to come here now that things are back to whatever normal is & say YUM. Bookmarked, 5ved & lol comments.
