How to make it

  • Spray 13x9" baking pan with cooking spray.
  • Preheat oven to 350.
  • In medium bowl,whisk together flour,baking powder and salt. In large mixing bowl,combine soft butter and sugar on med. speed,beating,till creamy.
  • Add eggs,one at a time,blending well. Stir in vanilla. Using low speed,slowly add flour mixture to butter mixture. Combine just till well blended. Stir in coconut.
  • Spread dough in pan. Place pan on center rack in oven.
  • Bake 25-30 mins until golden and tester,inserted in center,comes out clean. Cool completely on rack before cutting.
