Lobster Cakes with Jalapeno Mustard Sauce

- 1 pound cooked fresh lobster meat chopped shopping list
- 1/4 cup mayonnaise shopping list
- 1 egg shopping list
- 1/4 cup minced red onion shopping list
- 4 scallions sliced thinly shopping list
- 1/4 teaspoon cumin shopping list
- 1/4 teaspoon cayenne pepper shopping list
- 2 tablespoons bread crumbs shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- 1/2 cup cornmeal shopping list
- olive oil shopping list
- mustard jalapeno Sauce: shopping list
- 1 jalapeno pepper seeded and minced shopping list
- 1 cup mayonnaise shopping list
- 1/2 cup whole grain mustard shopping list
- 1 tablespoon fresh lemon juice shopping list
- 1 teaspoon chopped parsley leaves shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Preheat oven to 425. In mixing bowl blend together all ingredients except cornmeal. Scoop out 8 cakes and shape into patties then coat with cornmeal. Saute cakes in olive oil until brown on 1 side. Flip over and finish cooking in oven for 7 minutes. Serve with sauce. To make sauce combine all ingredients and blend until creamy.
