White Bean And Tomato Vegetable Soup With Orange Gremolata Recipe

Ingredients

Soup

one tablespoon evoo

one cup chopped onion

one cup chopped carrot

2 garlic cloves minced

3 cups broth either chicken or vegetable

2 cans cannelllini beans

1 can diced tomatoes with juices.....(14.5 ounces)

1/2 tsp dried oregano

coarse salt and freshly ground black pepper

Orange Gremolata

1/2 cup packed Italian parsley

2 strips orange zest coarsely chopped

2 garlic cloves

Garnish

fresh parmesean cheese

Directions

Heat the oil in a large soup pot medium heat.

Add onion and carrot and stir to coat.

Cover and cook over low heat till veggies are tender about 10 minutes

uncover and stir in the garlic about two minutes uncovered

Add the broth, beans, tomatoes, and oregano and heat stirring occasionally

When mixture boils reduce heat to low.. cover and simmer for 10 minutes.

Salt and pepper to taste

Orange Gremolata

Gather the parsley, orange zest, and garlic on cutting board

finely chop the ingredients together

Ladle the soup into bowls ad top each with a generous portion of gremolata

top with fresh cheese
