Ingredients

How to make it

  • Heat the oil in a large soup pot medium heat.
  • Add onion and carrot and stir to coat.
  • Cover and cook over low heat till veggies are tender about 10 minutes
  • uncover and stir in the garlic about two minutes uncovered
  • Add the broth, beans, tomatoes, and oregano and heat stirring occasionally
  • When mixture boils reduce heat to low.. cover and simmer for 10 minutes.
  • Salt and pepper to taste
  • Orange Gremolata
  • Gather the parsley, orange zest, and garlic on cutting board
  • finely chop the ingredients together
  • Ladle the soup into bowls ad top each with a generous portion of gremolata
  • top with fresh cheese
