White Bean And Tomato Vegetable Soup With Orange Gremolata

- Soup shopping list
- one tablespoon evoo shopping list
- one cup chopped onion shopping list
- one cup chopped carrot shopping list
- 2 garlic cloves minced shopping list
- 3 cups broth either chicken or vegetable shopping list
- 2 cans cannelllini beans shopping list
- 1 can diced tomatoes with juices.....(14.5 ounces) shopping list
- 1/2 tsp dried oregano shopping list
- coarse salt and freshly ground black pepper shopping list
- orange Gremolata shopping list
- 1/2 cup packed Italian parsley shopping list
- 2 strips orange zest coarsely chopped shopping list
- 2 garlic cloves shopping list
- Garnish shopping list
- fresh parmesean cheese shopping list
How to make it
- Heat the oil in a large soup pot medium heat.
- Add onion and carrot and stir to coat.
- Cover and cook over low heat till veggies are tender about 10 minutes
- uncover and stir in the garlic about two minutes uncovered
- Add the broth, beans, tomatoes, and oregano and heat stirring occasionally
- When mixture boils reduce heat to low.. cover and simmer for 10 minutes.
- Salt and pepper to taste
- Orange Gremolata
- Gather the parsley, orange zest, and garlic on cutting board
- finely chop the ingredients together
- Ladle the soup into bowls ad top each with a generous portion of gremolata
- top with fresh cheese
