Japanese Fruitcake

- Cake: shopping list
- 3/4 Pound butter shopping list
- 2 C. sugar shopping list
- 5 eggs shopping list
- 3 C. flour shopping list
- 3 tsp. baking powder shopping list
- 1 tsp. allspice shopping list
- 1 tsp cinnamon shopping list
- 2 tsp. vanilla shopping list
- 2/3C. white raisins (you could also use chopped dates) shopping list
- 2/3 C. Chopped pecans shopping list
- 1/2 C. milk shopping list
- Frosting: shopping list
- juice of 4 lemons (5 if they're small) shopping list
- 1 C. unsweetened flaked coconut shopping list
- 1 1/4 C. sugar shopping list
- 1 1/4 C. water shopping list
- 2 Tbs. cornstarch shopping list
How to make it
- For the Cake:
- Preheat oven to 350 Degrees
- Prepare round cake pans (grease and flour)
- Cream the butter and add sugar gradually.
- Incorporate eggs 1 at a time.
- Into a bowl sift : The flour and baking powder.
- Blend the flour mixture into the butter mixture.
- Add the milk.
- Now divide the batter in half.
- In one half stir in the allspice, cinnamon and raisins.
- Into the second half stir in the pecans and vanilla.
- Pour into the pans and bake until golden brown..
- For the frosting:
- Mix the lemon juice, coconut, sugar and water in a pot over medium heat.
- Bring to a boil and thicken with cornstarch.
- After the cake layers have cooled, frost between the layers, the top and the sides.
- If there's too much to fit into 2 round cake pans, you can always combine the remaining batters and bake them in a third together.
