Old English Fruitcake

- 4 pounds fruit andnuts shopping list
- 1 poundDark raisins shopping list
- 1 poundwhite raisins, 1/2 pound currants shopping list
- 1pound white raisins shopping list
- 1/2 pound candied cherries shopping list
- 1/2 pound candied pineapple shopping list
- 14 pound candid citron shopping list
- 2 ounces candied orange peel shopping list
- 2 oz, candied lemon peel shopping list
- 1/4 poun blanched almonds shopping list
- 1/4 pound pecan shopping list
- 1/2 cup Miederia shopping list
- 1/2 cup dark rum shopping list
- 2 cups flour, 1 tsp, baking soda shopping list
- 1/2 tsp each of: cinnamon cloves mace and allspice shopping list
- 1/2 cup btter shopping list
- 1 cup firmly packed brown sugar white sugar, 5 eggs beaten shopping list
- 1 tsp. Almond shopping list
- extract shopping list
How to make it
- Put raisins and currants in a large bowl add Maderia and rum let stand covered overnite, add candied fruits m ix w ell sift spices and soda, 1-1/2 cups flour,combined remaining flour with nuts add to all to the fruits mix,
- In another large bowl beat butter till light and cream in sugarstill lightand fluffy.beat in eggs almond extract add fruit nut mixture to batter stir. turn batter into well greased 10 inch tube pan or spring mold pan or 2 smaller cakes may be made Bake large cake in preheated oven 275 degrees for 3 1/2 -4 hours or till cake tester inserted comes out dry. smaller cakes bake half the time indicated
- let cake stand in pan on wire rack half hour run knife around pan or spring mold loosen remove cake to heavy aluminin foil large enough to close completely fold the closing double to seal cake once
- or twice before christmas open foil pour a little additional rum or wine on cake .when ready to use decorate with wreath of pecans and maraschino cherrys
