MARINATED PORK KABOBS DIABETIC FRIENDLY

- Ingredients: shopping list
- 2 cups low-fat plain yogurt shopping list
- 2 Tbs. lemon juice shopping list
- 4 Garlic cloves, minced shopping list
- ½ tsp. ground cumin shopping list
- ¼ tsp. ground coriander shopping list
- 2 pounds pork tenderloin, cut into 1 ½ -inch cubes shopping list
- 8 small white onions, halved shopping list
- 8 cherry tomatoes shopping list
- 1 medium sweet red pepper, cut into 1 ½ -inch pieces shopping list
- 1 medium green pepper, cut into 1 ½ -inch pieces shopping list
How to make it
- In a medium glass bowl, combine yogurt, lemon juice, garlic, cumin and coriander; mix well. Add pork; cover and refrigerate for 6 hours or overnight. Alternate pork, onions, tomatoes and peppers on eight skewers. Grill over medium coals for about 30 – 35 minutes or until meat reaches desired done-ness.
- Note: I have modified this recipe to a Diabetic Friendly one.
