How to make it

  • In a medium glass bowl, combine yogurt, lemon juice, garlic, cumin and coriander; mix well. Add pork; cover and refrigerate for 6 hours or overnight. Alternate pork, onions, tomatoes and peppers on eight skewers. Grill over medium coals for about 30 – 35 minutes or until meat reaches desired done-ness.
  • Note: I have modified this recipe to a Diabetic Friendly one.
  • Serving size: 1/8
  • Nutrition and diabetic exchanges: Equals 4 lean meat, 2 vegetables and ½ fat
  • Calories per serving: 299, Sodium: 87mg, Cholesterol: 94mg, Carbohydrate: 8gm, Fat: 7gm
