This is tasty with comlamentry spices. A nice main meal served alone or over rice. I have adapted the original recipe to a Diabetic friendly one. The original recipe was posted in The Taste of Home 1996 by Bobbie Jo Devany along with the photo.

Ingredients
  • Ingredients:
  • 2 cups low-fat plain yogurt
  • 2 Tbs. Lemon juice
  • 4 Garlic cloves, minced
  • ½ tsp. Ground cumin
  • ¼ tsp. Ground coriander
  • 2 pounds pork tenderloin, cut into 1 ½ -inch cubes
  • 8 small white onions, halved
  • 8 cherry tomatoes
  • 1 medium sweet red pepper, cut into 1 ½ -inch pieces
  • 1 medium green pepper, cut into 1 ½ -inch pieces

Directions
  1. In a medium glass bowl, combine yogurt, lemon juice, garlic, cumin and coriander; mix well. Add pork; cover and refrigerate for 6 hours or overnight. Alternate pork, onions, tomatoes and peppers on eight skewers. Grill over medium coals for about 30 – 35 minutes or until meat reaches desired done-ness.
  2. Note: I have modified this recipe to a Diabetic Friendly one.
  3. Serving size: 1/8
  4. Nutrition and diabetic exchanges: Equals 4 lean meat, 2 vegetables and ½ fat
  5. Calories per serving: 299, Sodium: 87mg, Cholesterol: 94mg, Carbohydrate: 8gm, Fat: 7gm
