How to make it

  • Preheat oven to 350 degrees.
  • Wash and remove all giblets and neck from turkey.
  • Loosen the skin between the breast.
  • Mix together the seasonings.
  • Rub half seasonings on top of turkey.
  • Mix other half of seasonings with butter.
  • Insert(using hands) the buttered seasonings under the skin of the breast.
  • Cut up celery and place in cavity of turkey.
  • Place turkey in roasting pan and cook for 15 minutes at 350.
  • Lower heat to 225-250 degrees and cook slowly for 6 to 6 hours 15 minutes.
  • Remove from oven and let sit at least 15 minutes before carving.
  • The stock is wonderful and will be great for gravy and dressing stock.
