Honey Peanut Butter Cookies Recipe

Ingredients

1/2 cup butter

1/2 cup all natural peanut butter

1/4 cup honey

1 cup whole wheat flour and 1/4 cup all-purpose flour

1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 cup Sucanat sugar

1 egg

1/2 tsp. vanilla

Directions

Heat oven to 375*

Beat together butter, peanut butter and honey

Add 1/2 cup of the flour, the sugars, egg, baking soda, baking powder, and vanilla.

Mix well.

Beat in remaining flour

If necessary, cover and chill dough till easy to handle.

Shape dough into 1-inch balls on a cookie sheet. Flatten by crisscrossing with tines of a fork.

Bake 7-9 minutes.

I just bought a bag of whole wheat flour today - these sound yummy...but there's that sucanat again! I suppose I could use regular brown sugar if I can't find sucanat?

Alterations

The only 2 alterations that I made were out of negligence and necessity, respectively. :)

I added 1/2 cup of honey rather than 1/4 simply because I wasn't paying attention. I added an extra ~1/2 cup of whole wheat flour rather than chilling to make the dough easier to handle and to bulk up the recipe slightly.

These cookies are absolutely delicious, and each one comes out looking like a work of art. Great recipe.
