Portuguese Seafood And Orzo

- 1 LB chourico Portuguese sausage cut into 1/4 in slices shopping list
- 1/2 lb cleaned and deviened shrimp butterflied shopping list
- 6 little neck clams scrubbed shopping list
- 6 mussels scrubbed shopping list
- 1 LB grouper filet shopping list
- 3 TBS olive oil shopping list
- 1 TBS floridian gourmet cajun spice shopping list
- 1 TBS Melindas scotch bonnet sauce shopping list
- 1/2 cup chopped onion shopping list
- 1/2 cup chopped bell pepper shopping list
- 2 cups of base tomato sauce ( see my recipe) shopping list
- 1 cup dry multi-colored orzo shopping list
How to make it
- Marinate the shrimp and fish in the hot sauce and cajun seasoning for 30 minutes.
- In a large saute pan fry the chourico for 5 minutes on a med-to high heat then turn each piece over and repeat. Remove sausage to a bowl and reserve. Meanwhile take a large pot and bring water to a boil for the orzo and cook according to box directions. In the sklillet used to fry the sausage add 1 TBS olive oil and lower heat to medium and add the bell pepper and onion. Stir for 30 seconds scraping bottom of pan. Saute for ten minutes. Add the remaining olive oil ( 2 TBS) and add the grouper filet. Cook for 2-3 minutes then flip filet. Cook another 2 minutes and start breaking filet apart with wooden spoon. ( Dont forget the orzo!) Add a little pasta water if necessary to aid in cooking the filet. Add the tomato sauce and bring to a boil, reduce heat to simmer and add the clams,mussels and shrimp and cook for ten more minutes. Add the drained orzo and mix thouroughly.

Can I get Melinda's scotch bonnet sauce in any major grocery store? I've never seen it personally. great recipe btw.
