Football Bratwurst Sandwiches

- 2 tbsp. olive oil shopping list
- 2 cups thinly sliced onion shopping list
- 2 cups thinly sliced red bell pepper shopping list
- 1 pound uncooked bratwursts shopping list
- 3 tbsp. minced garlic shopping list
- 1/2 cup beer(not dark) shopping list
- 1/2 cup chicken broth shopping list
- 1 tbsp. paprika shopping list
- 1 tbsp. chili powder shopping list
- 6 sourdough rolls, sliced in half lengthwise and lightly toasted shopping list
- 6 sliced provolone cheese shopping list
- 1 1/2 cups hot pickled vegetables shopping list
How to make it
- Heat the oil in a large skillet over medium heat. Add the onions, bell peppers and bratwurst to the skillet. Cook about 10 minutes until the vegetables are tender and the bratwurst are cooked through, turning occasionally. Add the garlic and cook 2 minutes, stirring frequently. Add the beer and chicken broth and heat to a simmer. Stir in the paprika and chili powder and simmer 3 minutes. Spoon some of the cooked onion and pepper mixture onto the bottom of each roll. Slice each bratwurst lengthwise into 4 pieces. Lay the bratwurst slices over the onion mixture. Top the bratwurst with a slice of provolone and some of the pickled vegetables. Place the top of the roll over and serve immediately.
