How to make it

  • Cover couscous with cold water and let stand for 15 minutes, then drain.
  • Add peanut oil, 3 ounces water, salt and cinnamon.
  • Mix well using your hands to break up clumps.
  • Place the couscous in the top of a couscoussier with boiling water and steam for 30 minutes.
  • Return couscous to a bowl and mix in olive oil then return to the couscoussier and steam for another 30 minutes.
  • Serve the couscous hot, arranged in a cone shape on a large serving platter.
  • Sprinkle with confectioners; sugar, dates, raisins and almonds.

    I do like couscous; I find it very versatile and it accepts just about any food to change the flavor into magic. This looks so tasty and a good accompanimnet to many dishes. Thanks.
