Aunt Marys Mexican Chicken Casserole Recipe
Delicious and easy chicken casserole. Excellent with a green salad.

Ingredients
  • 1 can cream of mushroom soup
  • 1 can cream of chicken soup
  • 8 ounces sour cream
  • 1 can chopped tomatoes w/green chiles, do no drain
  • ½ cup chicken broth
  • 4 cups cooked chicken, cut into 1" chunks
  • 8 8-10" flour tortillas
  • 8 ounces monterey jack cheese or mexican cheese, grated

Directions
  1. Blend first 5 ingredients together.
  2. Stir in chicken.
  3. Layer as follows in a 9 x 13 inch pan.
  4. 1/2 chicken mixture, 4 tortillas.
  5. 1/2 chicken mixture, 4 tortillas.
  6. Sprinkle cheese over top.
  7. Bake at 350 degrees farenheit for 30 minutes or until brown and bubbly.

This was real good... diffrent that what I'm used to.. In Texas they have a dish kinda like this.. we use corn tortillas.. I liked the change with the flour. There are several King Ranch casserole dishes on here... check them out and you will see what I mean...
