IMPOSSIBLE GARDEN PIE

- Ingredients: shopping list
- 2 cups cut fresh asparagus ( 1-inch pieces ) shopping list
- 1 ½ cups chopped fresh tomatoes shopping list
- 1 medium onion, chopped shopping list
- 1 garlic clove, minced shopping list
- ¼ tsp. dried basil shopping list
- ¼ tsp. salt shopping list
- ¼ tsp. pepper shopping list
- 1 cup ( 4-oz ) shredded part-skim mozzarella cheese shopping list
- ½ cup grated parmesan cheese shopping list
- ¾ cup reduced-fat biscuit/ baking mix shopping list
- 3 eggs shopping list
- 1 ½ cups fat-free milk shopping list
How to make it
- Preheat oven at 400.
- In a large bowl, combine the first seven ingredients. Transfer to an 8-inch square baking dish coated with cooking spray. Sprinkle with cheese.
- In another bowl, whisk the biscuit mix, eggs and milk until smooth; pour over cheese. Bake, un-covered, at 400 for 30 – 35 minutes or until set and a thermometer inserted near the center reads 160. Let stand 5 minutes before cutting. Yield: 6 servings.
