How to make it

  • Heat oil over medium heat.
  • Beat eggs slightly. Add flour, baking powder, salt, sugar, ricotta cheese, and vanilla. Whisk ingredients together until blended. Batter should be sticky.
  • Drop by half tablespoons full (like you would if you were baking cookies) into oil and fry until golden brown, about 3 mins.
  • Drain on paper towel and roll in confectioners' sugar. Eat and enjoy!
  • Want to powder like the professional's? Place unpowdered zeppoles into brown paper bag. Add a couple heaping tablespons of powdered sugar. Shake bag. Take out and eat!

    OK, I just ate my fill (about 6) of these fantastic little gems! Love um, my hubby smacked his lips and loved them also! So lite and fluffy! yummmmmmmy!!
