    Thanks Merlin! I much appreciate the perspective. The mirin idea originally included cardamom but there were too many fragrant notes going on there, so ginger it was.

    My girlfriend insisted that cinnamon was strictly a dessert spice, and challenged me to do something different with it. Glad you like!
