How to make it

  • In a non-stick skillet add the oil and the sausages and saute on a med-high heat until sausage starts to brown.
  • Flip sausages over and repeat.
  • Remove sausages to a plate.
  • Lower heat to med add the poblano,shallots and jalapeno and stir frequently for 3 minutes.
  • Add the butter and the cajun seasoning and saute another 5 minutes.
  • Add the file and stir for 1 minute.
  • Add the tomato sauce and cook for another 3 minutes until sauce gets thick.
  • Pour over sausages

    oh i love andouille sausage.. gonna give this one a try. quick question though. whats cajun voodoo seasoning? i wonder if i can find it up in chicagoland area?
