Andouille With Cajun Sauce

- 4 andouille sausages shopping list
- 1 jalapeno seeded and diced shopping list
- 1 lg or 2 small shallots diced shopping list
- 1/2 poblano diced shopping list
- 1/2 cup base tomato sauce ( see my recipe) shopping list
- 1 tsp cajun voodoo seasoning shopping list
- 1/2 tsp file powder shopping list
- 1 TBS evoo shopping list
- 1 tsp butter shopping list
How to make it
- In a non-stick skillet add the oil and the sausages and saute on a med-high heat until sausage starts to brown.
- Flip sausages over and repeat.
- Remove sausages to a plate.
- Lower heat to med add the poblano,shallots and jalapeno and stir frequently for 3 minutes.
- Add the butter and the cajun seasoning and saute another 5 minutes.
- Add the file and stir for 1 minute.
- Add the tomato sauce and cook for another 3 minutes until sauce gets thick.
- Pour over sausages

oh i love andouille sausage.. gonna give this one a try. quick question though. whats cajun voodoo seasoning? i wonder if i can find it up in chicagoland area?
