Spiced Moroccan Meatballs

- 1 lb. ground turkey shopping list
- 1/4 tsp. ea. salt & pepper shopping list
- 1/2 tsp. cinnamon shopping list
- 1 T. olive oil shopping list
- 1/2 c. dried apricots, chopped shopping list
- 1 med white or yellow onion, diced shopping list
- 1 - 14.5 oz can diced tomatoes shopping list
- 1/2 tsp. ground ginger shopping list
- 1/4 tsp. ea. red pepper flakes, additional salt & cinnamon shopping list
- 1/2 c. toasted almond slivers (optional) shopping list
How to make it
- Pre-heat oven to 350
- Combine turkey, salt, pepper & cinnamon in med bowl. Shape into small (aprox 1in.) meatballs & set aside.
- In large skillet, heat olive oil over med. Add meatballs, browning on all sides. Do not cook through, set in 8x8 baking dish or small casserole dish.
- Add onions & apricots to hot skillet. Continue cooking over med until onions are tender, aprox 3-5 min.
- Stir in can of diced tomatoes, red pepper flakes, ginger and additional salt & cinnamon. Simmer for aprox 3-5 more min.
- Pour sauce over meatball is baking/casserole dish. Cover and bake aprox 15-20 min. until meatballs are cooked through.
- Serve over rice with green peas added. Sprinkle toasted almond slivers over each serving.
- Recipe easily doubles, just be sure to add aprox 5 min to baking time.

I made these last night and they were a hit here too! I just added a little more cinnamon & ginger and a can of chic peas & they were on the money. Thanks for a great recipe.
