Olive and Lemon Potatoes

- 2 pounds idaho potatoes scrubbed clean and dried shopping list
- 3 fresh tomatoes washed and dried shopping list
- 5 olives chopped shopping list
- juice of 1 lemon shopping list
- 1/2 bunch parsley chopped shopping list
- 2 tablespoons olive oil shopping list
- 3 tablespoon butter shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
How to make it
- Cut tomatoes in half then toss with olive oil and season with salt and pepper.
- Place cut side down on a baking sheet and cook at 250 for 5 minutes.
- Remove from oven then cool completely and chop.
- Bake potatoes at 375 for 1 hour then cool slightly and peal and mash with a fork.
- Add remaining ingredients including tomatoes then serve while hot.
