Ingredients
  • COOKIE CRUST:
  • 1/2 cup soft butter
  • 1/2 cup light brown sugar firmly packed
  • 1 egg yolk
  • 1 teaspoon vanilla
  • 1/2 cup sifted all poupose flour
  • 1/2 cup raw quick cooking oats
  • TOPPING:
  • 3 squares semisweet chocolate
  • 1 tablespoon butter
  • 1/2 cup coarsely chopped walnuts or pecans

Directions
  1. Preheat oven to 375.
  2. Lightly grease a 13x9 pan
  3. In a large bowl, with wooden spoon or portable mixer at medium beat butter, egg yolk and vanilla until smooth.
  4. Add flour and oats
  5. Stir to combine well
  6. Press mixture ievenly in bottom of pan
  7. Bake 15 minutes or until golden brown
  8. cool slightly
  9. TOPPING:
  10. Melt chocolate and butter over hot, not boiling water
  11. Spread on cookie crust
  12. sprinkle with nuts.
  13. With a sharp knife, cut into bars while still warm.
  14. Cool completly in pan
