Tarator Bulgarian Yogurt Soup Recipe
This dish is eaten in the summer in Bulgaria and is one of my favoirtes. It is also easy to expand the recipe to meet your needs. This is great with a big slice of crusty bread and Bulgarian feta (siriene) as well.

Ingredients
  • 8oz plain yogurt (Danon or Brown Cow are the best)
  • 8 oz cold water
  • half of a cucumber, peeled
  • 1 T fresh dill weed, chopped
  • 1 clove minced garlic
  • handful of coarsly chopped walnuts
  • 1 t olive oil
  • salt to taste

Directions
  1. Combine the water and yogurt so that you have a smooth, thick liquid.
  2. Peel the cucumber and cut into bitesized pieces. If there are seeds removed these.
  3. Add all, ingredients, except the oil together and mix well.
  4. Chill for at least an hour before serving so that your flavors have time to combine.
  5. Drizzle oil on top before serving.
  6. If you find the taste of fresh garlic too strong, you can substitute with garlic salt or garlic powder. You can also substitute dried dill weed for fresh.
