CHEESE PUFFS

- Ingredients: shopping list
- 1 cup water shopping list
- 2 Tbs. butter or margarine shopping list
- ½ tsp. salt shopping list
- 1/8 tsp. cayenne pepper shopping list
- 1 cup all-purpose flour shopping list
- 4 eggs shopping list
- 1 ¼ cups shredded reduced-fat swiss cheese shopping list
- 1 Tbs. Dijon mustard shopping list
- ¼ cup grated parmesan cheese shopping list
How to make it
- Preheat oven at 425.
- In a large saucepan, bring the water, butter or margarine, salt and cayenne to a boil. Add flour all at once and stir until a smooth ball forms. Remove from heat; let stand for 5 minutes. Add eggs, one at a time, beating well after each addition. Continue beating until mixture is smooth and shiny. Stir in Swiss cheese and mustard.
- Drop by rounded teaspoonfuls 2 inches apart onto greased baking sheets. Sprinkle with Parmesan cheese. Bake at 425 for 15 – 20 minutes or until golden brown. Serve warm or cold. Yield: 4 dozen.
