EDS INDIVIDUAL HAM QUICHES - DIABETIC

- Ingredients: shopping list
- 2 slices Light Wheat bread, cubed shopping list
- 1 cup diced fully cooked low-sodium ham shopping list
- 1 cup shredded carrots shopping list
- ½ cup chopped celery shopping list
- 1 Tbs chopped onion shopping list
- Egg Beaters or egg substitute equivalent to 6 eggs shopping list
- ½ cup 1 % milk shopping list
- 1 Tbs. prepared spicy brown mustard shopping list
- 1 cup 2 % reduced-fat shredded cheddar cheese shopping list
How to make it
- Preheat oven to 350.
- Divide bread cubes among four Ramekins, Custard cups or 4 small loaf pans sprayed with non-stick cooking spray. Layer evenly the Ham, onion, carrots and celery. In a 4 cup measuring cup combine the egg substitute, milk and mustard; mix well. Pour evenly among the 4 pans. Sprinkle with the shredded cheese.
- Bake, uncovered, at 350 for 25 – 30 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes on a wire rack before serving. If any remaining cool them; cover and freeze for up to 3 months.
- To use frozen quiches: Carefully remove from pans or ramekins. Place on an ungreased baking sheet or microwave-safe plate. Bake uncovered, at 350 for 30 – 35 minutes or microwave at 50% power for 4 – 6 minutes or until heated through.
