Lacquered quotPekingquot Duck
From tablescape 14 years agoIngredients
- 1/2 tsp soy sauce shopping list
- 1 tbs honey shopping list
- 1 tsp five spice powder shopping list
- 1 tsp vinegar shopping list
- 1 tsp chopped garlic shopping list
- 1 tsp cornstarch, combined with a little water shopping list
- 2 duck breasts shopping list
- salt and pepper shopping list
How to make it
- Marinade
- Mix together the soy sauce and the honey.
- Sprinkle over the five-spice powder and stir in well.
- Stir in the vinegar, garlic and cornstarch
- Season the duck breasts with a little salt and pepper and place in an ovenproof pan. Pour the marinade over to coat the duck breasts entirely. Leave to marinate in the refrigerator for 24 hours.
- Cook the breasts in a hot oven, 425 degrees, for approximately 20 minutes, basting frequently with the marinade.
- To caramelize the tops, put under a hot broiler for several minutes until crisp. Watch carefully to prevent them from burning.
- Note 1: Start cooking the duck breasts skin side up, and turn them over during cooking. Turn again to glaze the skin side under a hot broiler, before serving.
- Note 2: To serve more people, make twice as much marinade and use a whole duck. Score the skin for the marinade to penetrate and cook the duck in the oven for about 45 minutes to 1 hour.
