How to make it

  • Preheat oven to 350 degrees.
  • Spray a non-stick 9 x 5 inch loaf pan with non-stick cooking spray.
  • Measure all ingredients, except for chopped apricots, into a large mixer bowl.
  • Beat on medium speed for 30 seconds, scrape sides and bottom of bowl and fold in chopped apricots.
  • Pour into the prepared pan and bake in a preheated oven for 35 to 45 minutes or until a wooden pick inserted in the center comes out clean.
  • Allow to cool in pan for 5 minutes then turn out and cool thoroughly.
  • Can be sliced into 12 to 14 slices.

    This is a great recipe. I used twice the amount of Apricots and no nuts as I didn't have any available. I had people walking into the house looking for a slice.
