Apricot Nut Loaf

- 2-1/2 cups flour shopping list
- 1 cup sugar shopping list
- 1-1/2 tablespoons baking powder shopping list
- 1/2 teaspoon salt shopping list
- 3 tablespoons oil shopping list
- 1/2 cup skim milk shopping list
- 2 egg whites shopping list
- 1/4 cup orange juice shopping list
- 4 teaspoons orange zest shopping list
- 1/4 cup finely chopped walnuts/pecans shopping list
- 8 large dried apricot halves, chopped shopping list
How to make it
- Preheat oven to 350 degrees.
- Spray a non-stick 9 x 5 inch loaf pan with non-stick cooking spray.
- Measure all ingredients, except for chopped apricots, into a large mixer bowl.
- Beat on medium speed for 30 seconds, scrape sides and bottom of bowl and fold in chopped apricots.
- Pour into the prepared pan and bake in a preheated oven for 35 to 45 minutes or until a wooden pick inserted in the center comes out clean.
- Allow to cool in pan for 5 minutes then turn out and cool thoroughly.
- Can be sliced into 12 to 14 slices.
