Creamy Salmon And Pasta

- 1 (15 1/2 oz) can of good quality salmon shopping list
- 2 tablespoons minced shallots shopping list
- 2 tablespoons olive oil shopping list
- 1 container heavy cream shopping list
- 1 teaspoon Dijon mustard shopping list
- 1/8 teaspoon crushed tarragon shopping list
- 8 oz large pasta twists, cooked according to package directions and drained shopping list
- 4 cups lightly packed fresh baby spinach shopping list
- Grated parmesan cheese shopping list
- salt and pepper shopping list
How to make it
- Drain Salmon, reserving liquid
- Break into large chunks
- In a large skillet, saute shallots in olive oil until tender
- Add cream to reserved salmon liquid to make one cup
- Add to skillet with mustard and tarragon
- Cook over medium heat for about 2 minutes or until slightly thickened
- Add pasta, spinach and 1/4 cup Parm and toss gently
- Stir in Salmon
- Season with salt and pepper to taste and heat thoroughly
- Serve with additional Parm if desired
