How to make it

  • Heat oil in a nonstick pan over med-high heat. When hot,add the chicken;season with salt and pepper.Cook in batches until chicken is browned opaque throughout. Transfer to warm platter.
  • Discard oil in pan and place over medium heat. Add the maple syrup,which will bubble;stir in the marmalade. Boil until sauce thickens,about 1 min.
  • Pour sauce over chicken;add the lemon juice. If you'd like,dust with parsley and scallions.
