I love sweet and tangy combinations. This recipe uses a mango dressing instead of teriyaki sauce in a stir fry. Also has bits of mango in it as well :)

Ingredients
  • 1/2 mango (or mango in a jar)
  • about half a cup mango juice (or you can use the juice from the jarred mangos)
  • 1tbsp barbecue sauce
  • 2 tbsp soy sauce
  • 1 tbsp flour (if you want your sauce a little thick)
  • salt and pepper (to taste)
  • 1 onion, minced
  • 1 tsp minced giner
  • 1 tsp minced garlic
  • 2 tbsp oil
  • your choice of stir fry veggies (I used a frozen bag that consisted of broccoli, snap peas, carrots, green beans, and asparagus)
  • chicken

Directions
  1. Cut chicken into chunks and make deep cuts
  2. make a sauce, mixing the mago juice, bbq sauce, and the soy sauce.
  3. marinate the chicken in about half of the sauce for about 15 minutes (the longer the better).
  4. fry the garlic and the ginger in oil
  5. Add the onions and grill until brown
  6. Add the marinated chicken and cook until the chicken is done.
  7. Add the stir fry vegetables, cook until tender,
  8. Slice the mango into thin strips and add to the pan
  9. Add remaining sauce, cook until vegetables are at your desired tenderness
