Aeblekage Recipe
The Danes call it a cake, but it's more like apple crisp, though not as sweet. Excellent stuff, especially served with whipped cream.

Ingredients
  • 3 lb. tart apples
  • 1 1/2 c. sugar
  • 1 1/2 c.. dried breadcrumbs
  • 1/2 lb. butter

Directions
  1. Preheat oven to 350.
  2. Grease an ovenproof dish and line with a layer of breadcrumbs. Dot with lumps of butter, sprinkle with sugar to taste and cover with a thick layer of peeled and thinly sliced apples.
  3. Repeat the procedure till all is used up. Finish with a layer of breadcrumbs. Press it all well together and dot with butter and bake for about 25-30 minutes. The apples must be well cooked. Cool the apple cake and turn it out of the dish. When the cake is cold, decorate with whipped cream. Best zapped in the microwave until warm.

Love apples! great fall post. do you add any extra spices?


Love this stuff but I have posted the alteration my grandpa was taught. We only would have this on XMas Eve and if we were lucky on XMas day but nothing ever lasted that long. Never had it cooled down because it never lasted.

My grandpa (1st gen Dane-American) learned this variation from his mom -

Bread
Butter
Cinnamon
Sugar
Applesauce

Put in layers in the order listed starting over after the applesauce layer in any type baking dish you prefer ending with a layer of the bread, butter, cinnamon and suger. Bake in an approximately 350 degree oven until it smells done (her words not mine) then serve with whipped cream.
