Tequilaberry Cafe Cauliflower Salad Recipe
This salad originated at Tequilaberry's in Minneapolis, and though it's no longer open, variations of their popular salad abound. This is my favorite...simple to make but full of flavor.

Ingredients
  • 1 large head of lettuce, torn in small pieces (be sure lettuce is very dry)
  • 1 large head cauliflower, broken up into small pieces
  • 2 cups Hellmann's mayonnaise
  • ¼ cup sugar
  • 1 tablespoon dry parsley
  • ½ cup parmesan cheese
  • 1 pound bacon, fried and crumbled

Directions
  1. Put lettuce and cauliflower in a large bowl; keep chilled until ready to serve.
  2. Mix mayonnaise and sugar together; keep chilled until ready to serve.
  3. Just before serving:
  4. Spread mayonnaise mixture over lettuce and cauliflower.
  5. Sprinkle parsley, parmesan and bacon over mayonnaise layer.
  6. Mix together thoroughly and serve.

Yes this stuff is addicting. I did enjoy this at Tequilaberries. I forgot about it until it popped up on recipes I would like. I knew some Minesotan(at heart)was responsible.
