Cowboy Pie

- 1 ½ lbs lean ground beef shopping list
- 1 clove garlic, minced shopping list
- 2 cups beef stock, divided shopping list
- 1 small onion, diced shopping list
- 1 clove garlic, minced shopping list
- 2 cups frozen mixed vegetables shopping list
- 1 tsp. ground rubbed sage shopping list
- 2 tbsp. flour shopping list
- 4 medium potatoes shopping list
- 2 peeled carrots shopping list
- ¼ lb processed cheese such as Velveeta, diced shopping list
- ¼ cup milk shopping list
- 2 tbsp. butter shopping list
- salt and pepper shopping list
How to make it
- Brown ground beef with onion and garlic, drain.
- Add 1 cup beef stock and sage.
- Wisk flour into the other cup of beef stock until dissolved and add to beef mixture.
- Cook about 5 minutes until stock begins to thicken.
- Add frozen mixed vegetables and cook until warmed through.
- Peel, dice, and boil carrots and potatoes until tender.
- Add milk, butter, cheese, salt and pepper, then mash (if you can do this in a stand mixer, it comes out very creamy).
- Put meat mixture in an 8 x 8 casserole dish and top with mashed potatoes and carrots.
- Bake in 400 degree oven for 20 minutes, or until top is nicely browned.
