Salsa Romesco

- 40 whole almonds, grilled (I think this is 'broiled' in US) shopping list
- 4 cloves of garlic, peeled and grilled shopping list
- a hard dry biscuit, broken up shopping list
- 2 tsps. paprika shopping list
- 1 tsp. cayenne or chilli powder shopping list
- 2 sprigs of parsley, finely chopped shopping list
- 3 grilled (broiled) tomatoes, finely chopped shopping list
- 1 tsp. wine vinegar shopping list
- olive oil to bind the sauce shopping list
How to make it
- Into a large mortar, in the sequence listed, put all the ingredients except the oil.
- Grind thoroughly to a paste with the pestle -the texture can be fine or coarse depending on preference.
- Bind with the olive oil, stirring well.

I love romesco sauce. It is delicious on grilled bread and served with grilled or poached seafood. The almond is a subtle texture while the garlic packs a punch. Good stuff.
