Cheddar Spoon Bread Recipe
Almost like a cheesy baked polenta, this spoon bread goes great with chili.

Ingredients
  • 1 cup cornmeal
  • 1 tsp salt
  • 1 1/2 cups water
  • 2 Tbsp butter
  • 1 1/2 cups aged Cheddar cheese, grated
  • 1 1/2 cups milk
  • 3 eggs, separated
  • Dash cayenne
  • 1 tsp baking powder

Directions
  1. In a medium bowl, combine cornmeal and salt, blending well.
  2. In a small saucepan, bring water and butter to a boil. Add to the cornmeal mixture, stirring continuously with a wire whisk. Add cheese and stir until melted. Ad milk and beat until smooth. Let mixture stand until cooled.
  3. Preheat oven to 375F and lightly butter a 2 quart casserole dish.
  4. In a medium bowl, beat egg whites until stiff peaks form.
  5. In a separate small bowl, beat egg yolks until thick and light; add cayenne and baking powder and mix well.
  6. Fold whites and yolk mixture gently into the cornmeal mixture until combined. Turn into the prepared dish.
  7. Bake for 55 to 60 minutes, or until golden and puffy.
  8. Serve hot from casserole, with plenty of butter.

That sounds heavenly - another "must try" from you!


My mom alway separated her egg whites and folded the whipped whites in at the end....the addition of cheddar is inspired and I'm positive it will be perfection. Can't miss with this one.
