How to make it

  • Mix together corn, beaten eggs, milk, melted butter, baking powder, salt, and pepper.
  • Add just enough flour to hold fritters together.
  • Drop by Tablespoons in hot oil.
  • Cook for about 4 minutes and flip cooking for an additional 4 minutes or so.
  • Drain on paper towels.
  • Serve with powdered sugar or syrup.
  • Or, if you're like me, BOTH!

    Another oldie but goodie. I'm thinking crushed corned may be the same as creamed corn, yes?

    Nothing went to waste during Grandma's time,leftover corn incorporated into such as this and I also enjoyed her potato pancakes as well,made with leftover mashed potatoes.
