Scallop And Shrimp Fettuccini

- 2 Tbs olive oil shopping list
- 3/4 lb scallops shopping list
- 3/4 lb large shrimp,shelled and deveined shopping list
- 1/2 tsp salt shopping list
- 1/8 tsp black pepper shopping list
- 2 c fat free half and half shopping list
- 1 Tbs cornstarch shopping list
- 1 can (6.5 oz) clams,undrained shopping list
- 1/2 c plus 6 Tbs shredded swiss and gruyere cheese blend shopping list
- 2 Tbs fresh tarragon1/8 tsp cayenne shopping list
- 1 box (12 oz) spinach fettuccini,cooked following pkg. directions shopping list
How to make it
- Heat oven to 350 degrees. Coat a 3-1/2 qt. oval dish with non-stick cooking spray.
- Heat oil in large non-stick skillet over med-high heat. Add scallops,shrimp,1/4 tsp salt and pepper. Cook for 2 mins per side. Remove to plate.
- Blend half and half and cornstarch. Bring to a simmer n the skillet. Simmer 1 min. Take off the heat and stir in clams and the juices,1/2 cup of the cheese,tarragon,cayenne and remaining 1/4 tsp salt. Add cooked shellfish and toss with fettuccini.
- Spoon into prepared dish. Sprinkle with remaining 6 Tbs cheese. Bake for 20 mins.
