Ingredients

How to make it

  • Drain strawberries into 1 c measure and reserve juice; set berries aside. Add enough water to juice to measure 1 c;pour into a large saucepan. Bring to a boil over med. heat. Remove from the heat;stir in the gelatin until dissolved.
  • Add ice cream;stir till blended. Refrigerate for 5-10 mins or just till thickened(watch carefully)
  • Fold in reserved strawberries. Pour into pastry shell. Refrigerate till firm,about 1 hour. Garnish with fresh strawberries,if desired. Refrigerate leftovers.

    I made this pie yesterday & have to say it is super delicious. I thought it might turn out to be overly sweet, but not a chance. Even though the strawberries are sweetened there was just enough tartness in them to off set the sweetness of the icecream. I topped it with whipped cream & sliced fresh strawberries & I thoroughly enjoyed a big piece. I took a picture & would like to know if you would like me to post it here. Maybe you would prefer to wait & post one yourself, thought I would ask you first. Thanks again for a great recipe.
