Mango Peach And Rum Bread Pudding

- Mix and soak shopping list
- 3 cups diced mixed ripe mango and peaches( 1 large ripe mango , shopping list
- 1 large ripe peach or as needed to make 3 cups fruit) shopping list
- 1/2 cup dark raisins shopping list
- 1/4 cup light rum shopping list
- Mix and soak: shopping list
- 1 loaf stale French bread sliced or cubed ( some French loaves are wide and fat, I use the more narrow ones ) shopping list
- 2 cup heavy cream, warmed in the micro or stove top shopping list
- Beat till pale and thick and lemon colored shopping list
- 4 large eggs, room temp shopping list
- 1 cup sugar shopping list
- 1 tsp clear vanilla shopping list
- 1 tsp mixed apple pie spices ( or pinches of ground cinnamon, nutmeg, cloves ) shopping list
- dash salt shopping list
- Extra cream or half and half if needed if mixture seems too dry shopping list
- unsalted butter pats shopping list
- grated nutmeg shopping list
How to make it
- 2, 8 x 4 inch loaf pans
- Combine the soaked bread with the egg mixture and spices, salt and blend well
- Add and combine gently the soaked fruit
- Divide into 2 loaf pans
- Let sit on the counter 1/2 hour or longer, ( unbaked mixture may be prepared several hours ahed of time ) making sure bread is immersed; if desired add a little bit more cream or half and half over the top of the bread pudding and press gently so bread absorbs the liquid
- Slice a pat or two of butter onto each loaf
- Sprinkle with nutmeg
- Bake in a 350F oven 45 misn to 1 hour or puffed and golden
- Cool on racks to warm
- Serve ( spoon ) right from the pan topped with some flavored whiped cream ( sweented with rum or mango syrup )
- Garnish with a mint leaf if desired
- Cold refrigerated pudding may be sliced from the loaf, plated and reheated and topped with any dessert sauce ( butter, rum berry,coconut ) etc if desired
- So, this is good either, warm, room temp or even reheasted when cold!
- And from past experience from making bread puddings this freezes well too
- Variations: try cream of coconut for part of the liquid, add chopped drained marachino cherries for color, if you like coconut, add some to the fruit mixture
