How to make it

  • Preheat oven to 350 degrees, grease a loaf pan.
  • Combine the cornmeal, flour, sugar, salt, nutmeg, cinnamon, baking powder, and baking soda in a large bowl.
  • Add banana, buttermilk and vanilla to the dry ingredients.
  • Stir briefly, then pour the oil over the batter.
  • Stir just until all the ingredients are moistened, yet thoroughly blended; take care not to overmix.
  • Bake until tests done, about 45 - 50 minutes.
  • Let cool in the pan 15 minutes, then unmould onto a rack and cool completely.
  Close

    Well it wouldn't be this recipe anymore, but I say go ahead and try, it's only flour and cornmeal

    Hmmmm I like your idea here, and I am thinking of doing something similar with that recipe Maybe I can add eggnog instead of the buttermilk. Do you know if that would work? I still like to see the bananas in the mix, but something else to sweeten the flavor up. Maybe instead of the bananas, I put in a 20 oz can of apple pie filling. What do you think?
