Oysters Rockerfeller

- 24 fresh, unopened oysters shopping list
- 3/4 cups beer shopping list
- 2 cloves garlic shopping list
- seasoned salt to taste shopping list
- 4 black peppercorns shopping list
- 1/4 cup butter shopping list
- 1/2 onion, chopped shopping list
- 1 clove garlic, crushed shopping list
- Half of a 10 oz package frozen chopped spinach, thawed and drained well shopping list
- 4 ounces shredded monterey jack cheese shopping list
- 4 ounces shredded Mozzarelle cheese shopping list
- 4 ounces shredded Fontina cheese shopping list
- 1/4 cup milk 1 teaspoon salt, or to taste shopping list
- 1/2 teaspoon black pepper shopping list
- 2 tablespoons fine bread crumbs shopping list
- Cooked crumbled bacon, optional shopping list
How to make it
- Clean the oysters and place in a large stockpot
- Pour in the beer and enough water to cover the oysters
- Add two cloves garlic, seasoned salt and peppercorns
- Bring to a boilRemove from heat, drain and cool
- Once oysters are cooled, break off and discard the top shell
- Arrange the oysters on a baking sheet
- Preheat oven to 425 degrees
- Melt butter in a saucepan
- Cook onion and crushed garlic in the butter until soft
- Reduce heat to low, and stir in spinach and cheeses
- Cook until cheese melts, stirring frequently
- Stir in milk and season with salt and pepper
- Spoon sauce over each oyster, just filling the shell
- Sprinkle with bread crumbs and bacon
- Bake until golden and bubbly about 8-10 minutes
