How to make it

  • Melt butter in a pan and gently fry vegetables for 5 minutes.
  • Allow to cool.
  • Beat together milk and egg.
  • In a large bowl stir together cheese, flour, salt and vegetables.
  • Stir in milk mixture until just combined.
  • Pour into 12 buttered or lined muffin cups.
  • Combine extra cheese and sprinkle over muffin tops.
  • Bake in 400° / 200°C oven for 20 minutes.
  • Keep an eye on them nearing the end as you do not want the cheese to burn.
  • Serving them warm is the way I like them but at room temperature is fine.
  • Makes 12 medium, 6 large or 24 mini
