How to make it

  • Preheat the oven to 180 degrees c/Gas mark 4 and lightly grease a baking sheet.
  • Cream the butter, fat and sugar together untill light and fluffy. Beat in the remaining ingredients.
  • Roll the dough into small balls and place on the baking sheet. Flatten with a fork dipped in hot water.
  • Bake untill golden for 20 minutes.
  • Leave to cool on the baking sheet.
  • To make the filling, cream the butter untill fluffy then gradually beat in the icing sugar and cocoa powder.
  • Sandwitch the cookies together in pairs with the filling.
