Strawberry Muffins

Great for snacking Sometimes I like to toast the muffins and put some butter on them to go with my tea or coffee.
Ingredients
- 2 cups all-purpose flour shopping list
- 1/2 cup sugar shopping list
- 1 TBS baking powder shopping list
- 1/2 tsp salt shopping list
- 1 egg shopping list
- 3/4 cup milk shopping list
- 1/3 cup vegetable oil shopping list
- 1 cup chopped fresh strawberries shopping list
- Topping shopping list
- 1 TBS sugar shopping list
- 1/4 TSP ground cinnamon shopping list
How to make it
- Preheat oven to 400 degrees F
- Line 12 medium muffin cups with paper liners or grease bottoms only
- For batter, combine flour,sugar,baking powder and salt in a large bowl.
- In small bowl, whisk egg, milk and oil.
- Add to dry ingredients stir until just moistened (batter will be lumpy)
- Gently stir in strawberries.
- Spoon batter into prepared muffin cups,filling each cup 2/3rds full.
- For topping, combine sugar and cinnamon in small bowl, sprinkle evenly over batter in cups.
- Bake 20-25 minutes or until golden brown
